Delicious and Healthy Eggplant Recipe

Ingredients:

1 large eggplant, peeled in half and sliced
Salt
1 cm of oil for frying
2 tablespoons of oil
1/4 cup of garlic, minced
5 ripe tomatoes, thickly sliced
Pepper
Water
1 chopped onion
1 bell pepper, chopped
1 tablespoon of tomato paste
1/2 teaspoon of cumin
Optional: Additional pepper

Instructions:

1.Prepare the Eggplant:

Sprinkle salt on both sides of the eggplant slices.
Let it sit for 10 minutes, then dry well to remove excess water.

2.Fry the Eggplant:

Heat 1 cm of oil in a pan over medium heat.
Fry the eggplant until golden brown, then drain well on paper towels.

3.Cook the Tomatoes:

In a separate pan, heat 2 tablespoons of oil over low heat.
Add 1/4 cup of minced garlic and fry until golden.
Add the sliced tomatoes, a pinch of salt, and pepper.
Cover and cook for 5 minutes, then flip the tomatoes and cover for another 5 minutes.
Add the fried eggplant to the pan with the tomatoes.
Add a little water, cover, and let it simmer on low heat.

4.Roast the Eggplant:

Pierce the remaining eggplant with a knife and roast in the oven at the highest heat for 25 minutes.
Once roasted, peel the eggplant and cut into large pieces.

5.Final Cooking Steps:

In a pan, heat 3 tablespoons of oil.
Add 1 chopped onion, 1 chopped bell pepper, and 1 tablespoon of garlic.
Add 1 tablespoon of tomato paste, salt, black pepper, and 1/2 teaspoon of cumin.
Add 3 peeled tomatoes (optional), cover, and cook for 5 minutes.
Add the roasted eggplant pieces and cook for another 2 minutes.

6.Serve and Enjoy:

Your delicious and healthy eggplant dish is ready to serve!
