Bean and Lentil Soup with Greens Recipe
I’m sharing a delicious recipe for bean and lentil soup with greens.
Ingredients:
Beans and lentils (soaked overnight)
2 cans diced tomatoes
Olive oil
2 carrots
3 celery sticks
4 cloves of garlic
Greens of your choice (e.g., kale, spinach, dandelion greens)
Instructions:
Start by soaking beans and lentils overnight. Then, boil them until tender.
In a pot, heat olive oil and sauté carrots, onions, and celery until tender.
Add garlic, ground cumin, and curry powder. Sauté until fragrant.
Add diced tomatoes and stir.
Add boiled beans and lentils.
Add water or vegetable stock to cover the soup by about an inch.
Season with crushed red pepper, vegetable stock seasoning, and salt to taste.
Add your choice of greens and let them cook down for 15-20 minutes until tender.
Serve with a drizzle of olive oil on top for creaminess and extra health benefits.
