Marinated Cucumber, Onion, and Tomato Salad

Ingredients:

3 medium cucumbers, peeled and cut into 1/4-inch-thick slices
1 medium onion, chopped and divided into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon coarse freshly ground black pepper
1/4 cup oil
1 teaspoon fresh mint (chopped), optional

Instructions:

1.In a large bowl, combine the sliced cucumbers, onion rings, and tomato wedges.

2.In a separate bowl, whisk together the vinegar, sugar, water, salt, black pepper, and oil until well combined. This will be our marinade.

3.Pour the marinade over the cucumber, onion, and tomato mixture. Make sure everything is well coated.

4.Cover the bowl and refrigerate for at least 2 hours, allowing the flavors to meld together and the vegetables to marinate.

5.Before serving, garnish with fresh mint (if desired) for an extra burst of flavor.

6.Serve chilled and enjoy!
