1 gallon of milk 1/2 cup of lemon juice

Transfer the milk into a big saucepan and bring it to a temperature of 80 degrees Fahrenheit over medium heat. In a separate basin, mix the lemon juice and one cup of water while the milk is boiling. After the milk reaches 80 degrees, whisk continuously while progressively adding the lemon juice combination. Curds and whey will start to separate from the milk as it starts to curdle. After turning off the heat, let the mixture alone for five minutes. Spread cheesecloth over a colander and set it over a big basin. Transfer the curds and whey mixture into the colander lined with cheesecloth. Twist the cheesecloth into a bundle by gathering it together. After hanging the bundle over the basin, let it half an hour to drain. When the whey stops running off the cheesecloth, take the cheese out and put it in a container. Before serving, place the container in the refrigerator and cover it for at least 24 hours.
