Flying Salad: Korean-Style Beetroot Salad

Ingredients:

4 medium beetroots, peeled and grated

2 carrots, peeled and grated

1/2 onion, finely sliced

2 cloves garlic, minced

1 tablespoon of fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vinegar (apple cider or rice vinegar works well)

1-2 teaspoons sugar, depending on your taste

1/2 teaspoon crushed red pepper flakes (adjust to taste)

Sesame seeds for garnish

Fresh cilantro or parsley, chopped, for garnish

Instructions:

1.Prepare the Vegetables:

Using a hand grater or a food processor, grate the beetroots and carrots into thin strips. Place in a large mixing bowl.

Add the finely sliced onion to the bowl.

2.Make the Dressing:

In a small bowl, combine the minced garlic, grated ginger, soy sauce, sesame oil, vinegar, sugar, and red pepper flakes. Stir well until the sugar is dissolved.

3.Combine and Marinate:
