How To Make Classic Beef, Tomato, And Macaroni Soup

Winter has officially arrived, and with it, the comfort of hearty, warming meals. This week, our first snowfall has me craving something meaty and satisfying. On cold evenings, nothing beats curling up with a bowl of hot, flavorful soup. One classic dish that never disappoints is beef, tomato, and macaroni soup—a crowd-pleaser that the whole family will love.

To whip up this cozy meal, you’ll need one pound of lean ground beef, a cup of chopped yellow or white onion, six cups of beef broth, and a can of chopped tomatoes. Add to that a teaspoon of Worcestershire sauce, a tablespoon of tomato paste, and seasonings like dried basil, oregano, salt, and pepper. The elbow macaroni and optional frozen mixed veggies make this dish both hearty and filling.

Start by browning the ground beef with the chopped onions until the meat is cooked through and the onion becomes translucent. Then, add the beef broth, tomatoes, Worcestershire sauce, tomato paste, and seasonings, letting it all simmer until the flavors meld together. Stir in the macaroni, making sure to cook it until just al dente, and add the frozen veggies for extra heartiness.
