Half a pumpkin.
1 onion.
3 cloves of garlic.
1 carrot.
1 pepper.
Spring onions.
Parsley.
6 tablespoons oatmeal.
2 eggs.
Salt and black pepper.
2 tablespoons vegetable oil.
2 tablespoons yogurt.
2 canned cucumbers.
3 olives.
Dill.
Instructions:
Preheat your oven to 180 degrees.
Peel and chop the pumpkin into small cubes.
Place the chopped pumpkin on a baking tray and bake for 40 minutes until tender and golden brown.
Meanwhile, finely chop the onion, garlic, carrot, pepper, spring onions, and parsley.
In a mixing bowl, combine the oatmeal, eggs, salt, and black pepper. Mix well.
Heat vegetable oil in a pan and sauté the chopped onion, garlic, carrot, pepper, spring onions, and parsley until softened.
Add the sautéed vegetables to the oatmeal mixture and mix thoroughly.
Form the mixture into patties and fry them in vegetable oil until golden brown on both sides.
Serve the pumpkin oatmeal patties with a dollop of yogurt, sliced canned cucumbers, olives, and garnish with dill.
